Beets are a sweet delicious earthy root vegetable. You may see Red (or purplish) Beets and Golden Beets at the farmers markets or grocery store. The Golden Beets tend to be less sweet than the Red beets, but just as delicious with the same nutritional values.
One cup of beets are only 59 calories filled with fiber, potassium and protein. Beets are high in Vitamin C, Magnesium, Iron, B-6 and Calcium.
